Food poisoning: how to recognize and what to eat after?

Summer is probably the champion of all seasons by the number of food poisoning. Heat, poor standards of hygiene food storage and the emergence of many fresh fruits, berries and vegetables – all of which are common causes of poisoning. Though many products contain potentially harmful organisms, they are usually destroyed during the cooking but in the summer we eat a lot of “raw! food without using heat treatment.

Some foods carry a greater risk of food poisoning than others. These include nadovrazhnoe meat and chicken, eggs, unpasteurized dairy products, shellfish and unwashed fruit and vegetables.

Most often the causative agents of food poisoning are the five pathogens:

  • Norovirus (commonly found in oysters, fruits and vegetables)
  • Salmonella (usually found in eggs, meat and dairy products)
  • Clostridium perfringens (found in meat and poultry)
  • Campylobacter (found in nedoveriem meat and contaminated water)
  • Staphylococcus aureus (found in foods of animal origin such as cream, eggs and milk)

Symptoms of poisoning

Since there are many different types of organisms that can cause food poisoning, its symptoms and severity can vary. Moreover, the time from food poisoning before the onset of symptoms can vary from a few hours to several days, which then puts into a stupor thinking, “What did I eat?“.

Abdominal pain and cramping

Abdominal pain and cramping can occur when the mucous membrane of the stomach and intestines become inflamed. The abdominal muscles are reduced to accelerate the natural movement of the intestines as quickly as possible to get rid of harmful organisms, thereby causing painful spasms.

Diarrhea

Diarrhea is defined by the presence of liquid stools three or more times in 24 hours. The biggest health risk posed by diarrhea is dehydration, so it is important to make sure you are drinking enough fluids.

Headache

You may experience a headache when you have food poisoning, which is a common symptom of dehydration.

Vomiting

It is a protective mechanism that helps your body get rid of harmful microorganisms that you have eaten. If you are vomiting, don’t try to hold back, but better succumb to the “survival instinct”.

General depression

During the ingestion of the infection, we are releasing a chemical substance cytokines. Cytokines have many different roles, but the important is the regulation of the immune response to infection. Roughly speaking, they are misleading their immune cells where to go and how to behave. Their presence also causes some typical symptoms, such as loss of appetite. Depression, fatigue, pain.

High temperature and chills

Fever is common in many diseases and is part of the natural defence of the body against infection. Fever producing substances, called pyrogens, provoke an increase in temperature. They are released either by the immune system or infectious bacteria trapped in the body. It helps to fight infection, making the environment too hot for bacteria or viruses which caused the infection.

Muscle pain

While poisoning the body releases histamine, a chemical that helps dilate blood vessels, allowing more leukocytes to undergo to fight the infection. Histamine helps to increase blood flow to infected areas of the body. Along with the other substances involved in the immune response such as cytokines, histamine can invade other parts of your body and can irritate pain receptors.

The symptoms of food poisoning usually last no more than 48 hours. If the date of onset of symptoms was two days ago, it’s time to consult a doctor. Remember that to serious symptoms such as blood in stools, dizziness, muscle weakness and severe cramping of the stomach, should be taken seriously. Do not wait until they disappear.

What to eat after food poisoning?

First of all, it is worth remembering that now the body is weakened and not able to work in the same mode as before. You should give him a little “vacation” and not load the extra calories.

Drink water. This item is perhaps the most important. Since after the poisoning the body dehydrated, especially if you have observed vomiting, or diarrhea. Drink often and in small portions of clean water.
When you feel there is a part of the symptoms have disappeared, start to eat soft foods for the stomach and the gastrointestinal tract. It should be low-fat foods with low fiber content (bananas, egg whites, boiled potatoes, oatmeal, etc.)
Don’t fill up. After poisoning, it is desirable to introduce the food gradually, in small portions and not “to spoil“. Everything should be as easy as possible, give preference to steaming and boiling.
Avoid foods-irritants: alcohol, caffeine, spicy, fried, foods with a high fiber and dairy products.

And finally, remember not to ruin a summer vacation and avoid such troubles as the poisoning will help you with hygiene, the right food choices and maintaining the conditions of their storage.
